The Mighty Food Fight have taken Bristol’s street food scene by storm! Hitting the streets with René late last year, this duo serve up the finest vegan delicacies, fiery balls & delicious doughnuts. With a stunning lunchtime location & a few supper clubs in the pipeline with Sky Kong Kong, it looks like this pair are unstoppable. Hannah & Isabel invite you to join the food fight by giving their simple yet mighty Super Salsa a go at home. Check out the recipe below.
2 regular tins plum tomatoes
1/4 large onion
1 lime, juiced
2 cloves garlic
1 tsp agave syrup
Dash of salt and pepper
And then… choose what kind of salsa you’d like! Add a small handful of parsley for a fresh, non-spicy salsa that’s good with salad, chuck in 3 chipotles and some coriander for a spicy and smoky flavour to top your nachos with! Some pineapple or mango will give you a sweeter taste and goes really well with a spicy dinner.
If you have a blender…
Well this makes it super easy! First chuck in your onion and garlic and pulse until they are finely chopped. Add all the other ingredients (the whole plum tomatoes only, plus a little of their juice depending on how viscous you like your salsa) and pulse until you have the texture you want. Taste for seasoning.That’s it!
If you don’t have a blender…
Dude, you’ve got to do all the chopping by hand. But you know what, it will be twice as rewarding when your salsa is finely made. Finely chop the onion and press the garlic, chop up your tomatoes, herbs and any other ingredients you’d like and mix it up. Add the lime juice, agave and seasoning and you’ve got your super salsa.
